This is a recipe Vince Knight from His Until Dawn uses to cook breakfast for Jade.  And he looked yummy doing it, too.  Can't resist a man who can cook.

 

Vegetable Frittata.

Ingredients:

8 eggs

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon chopped fresh parsley

1/2 teaspoon red pepper sauce

1/2 cup of diced red onions

1/2 cup diced red bell pepper

1 cup sliced mushrooms

2 cups of cooked and drained spinach

1 cup low-fat mozzarella cheese

2-4 ounces feta cheese

 

Preheat oven to 350 degrees.

1.        Beat eggs, parsley, salt, and pepper sauce until well-blended. Set aside

2.        Heat oil in a nonstick skillet over medium-high heat.  Cook mushrooms, pepper, and onions for 5 minutes, stirring frequently, until veggies are crisp and tender. 

3.     Add spinach and mix all the vegetables together.  Set aside and let them cool

4.      Sprat a 9X9 baking dish with non-stick cooking spray

5.     Spread mozzarella evenly at the bottom, next the vegetables, and last  pour egg mixture over the vegetables.

6.        Sprinkle with feta cheese and bake for 40 minutes until golden brown

7.  Let it cool down for approximately 10 minutes, then serve.
